Monkfish is the freakiest fucking fish I've ever had to work with. tasted pretty good though.
Flank steak with pumpkin puree and a yogurt sauce. Sounded weird as hell but it was damn good.

Fois Gras. Toasted the baguette in the fois gras fat then made a cherry gastrique sauce to put over it. Incredibly rich dish but so good. SO GOOD. (the way to make fois gras is really sad.
I won't eat it anymore now that I know. But it was so delicious ;-; )
Made a grass fed ribeye. Coated in kosher salt for about an hour then rinsed the excess off. Made the meat incredibly tender. Grilled it then ate the fuck out of that bastard.
